Simple Fudgy Brownie Cookies
by Megan JosolThese cookies are sweet and delicious. They have a super fudgy rich taste. I like to have them along side my coffee. Such a great treat for your whole family to enjoy, it's definitely a favourite in our house.

Equipment
- Oven
- Hand/Stand Up Mixer
- Spatula
- Cookie Sheet
- Cooling Rack
Ingredients
Wet Ingredients
- 2/3 cup White Granulated Sugar
- 1/2 cup Melted Vegan Butter
- 3 Tablespoons Coconut Oil
- 1 Flaxseed Egg (1 Tablespoon Ground Flaxseed and 3 Tablespoons Water)
- 2 teaspoons Pure Vanilla Extract
Dry Ingredients
- 1/2 cup Unsweetened Cocoa Powder
- 1 1/4 cups Unbleached All Purpose Flour
- 1/2 teaspoon Baking Powder
Optional Ingredients
- Chocolate Chips
- Peanuts
Instructions
- Preheat oven to 350°F.
- Mix together flaxseed and water to form the flaxseed egg and set aside so it has time to come together.
- Beat sugar and butter together. Add in the oil, egg, and vanilla extract.
- In a separate bowl combine all dry ingredients. Then fold it into the wet mixture.
- Scoop out a heaping tablespoon of dough onto a cookie sheet.
- Bake for 10mins in preheated oven. Let cool on tray for 10mins before serving. *
- ENJOY!!
Notes
*Do not over bake or they'll turn out dry.
