Simple Fudgy Brownie Cookies

These cookies are sweet and delicious. They have a super fudgy rich taste. I like to have them along side my coffee. Such a great treat for your whole family to enjoy, it's definitely a favourite in our house.

Servings 20 bite size cookies

Equipment

  • Oven
  • Hand/Stand Up Mixer
  • Spatula
  • Cookie Sheet
  • Cooling Rack

Ingredients
  

Wet Ingredients

  • 2/3 cup White Granulated Sugar
  • 1/2 cup Melted Vegan Butter
  • 3 Tablespoons Coconut Oil
  • 1 Flaxseed Egg (1 Tablespoon Ground Flaxseed and 3 Tablespoons Water)
  • 2 teaspoons Pure Vanilla Extract

Dry Ingredients

  • 1/2 cup Unsweetened Cocoa Powder
  • 1 1/4 cups Unbleached All Purpose Flour
  • 1/2 teaspoon Baking Powder

Optional Ingredients

  • Chocolate Chips
  • Peanuts

Instructions
 

  • Preheat oven to 350°F.
  • Mix together flaxseed and water to form the flaxseed egg and set aside so it has time to come together.
  • Beat sugar and butter together. Add in the oil, egg, and vanilla extract.
  • In a separate bowl combine all dry ingredients. Then fold it into the wet mixture.
  • Scoop out a heaping tablespoon of dough onto a cookie sheet.
  • Bake for 10mins in preheated oven. Let cool on tray for 10mins before serving. *
  • ENJOY!!

Notes

*Do not over bake or they'll turn out dry.
