Plant-Based Pumpkin Chocolate Mug Cookie

This is such a great recipe if you just want a little sweet treat but don't want to bake a whole batch of cookies. It's got the perfect amount of sweetness to satisfy that sweet tooth. Definitely a family favourite in our house.

Wet Flaxseed Base
- 1 Tablespoon Pumpkin Puree
- 1 Tablespoon Water
- 2 teaspoons Ground Flaxseeds
- ½ teaspoon Molasses
- ¼ teaspoon Vanilla Extract
Dry Ingredients
- 1 Tablespoon Xylitol or White Sugar
- ¼ cup All Purpose Flour
- ⅛ teaspoon Baking Soda
- ⅛ teaspoon Salt
- 2 Tablespoons Diced Dates, Semi Sweet Chocolate Chips or Raisins
Combine all the wet flaxseed base ingredients into a mug with a spoon.
Add in the dry ingredients and mix until just combined.
Microwave on high for 45 seconds.
Let rest for at least a minute before digging in. (It will cook a bit more after you take it out.)
