Chocolate Chia Sourdough Discard Scones

Instead of throwing out the beautiful discard, make these delicious scones. I have been enjoying coming up with recipes for our extra discard. This is definitely a top one! Hope you enjoy them as much as our family does.

Equipment

  • Oven
  • Hand/Stand Up Mixer
  • Whisk
  • Non-Stick Baking Sheet

Ingredients
  

Flour Mixture

  • 2 cups Unbleached All Purpose Flour
  • 1/4 cup Sugar
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon salt
  • 1/2 cup Cold Vegan Butter
  • 1 cup Chocolate Chips

Wet Ingredients

  • 1/2 cup Sourdough Starter Discard
  • 1 Chia Seed Egg (1 Tbsp chia seeds, 2 Tbsp water)
  • 1 teaspoon Vanilla Extract
  • 2 Tablespoons Unsweetened Cashew or Almond Milk

Instructions
 

Chia Seed Egg

  • Prepare your chia seed egg in a bowl by mixing 1 Tbsp of chia seeds with 2 Tbsp of water. Let this sit for at least 5 minutes.

Scone Dough

  • Mix flour, sugar, baking powder and salt together in your mixing bowl. Shred in the cold butter to create a crumbly flour mixture. (Shred with either a grater or slice thinly with a knife.) Then stir in the chocolate chips.
  • In a separate bowl mix together all the wet ingredients.
  • Then pour the wet mixture into the flour, mix until just combined.
  • Preheat the oven to 400° F.
  • Dump the dough onto a cutting board.
  • Shape into a 3" thick pizza shaped dough, then cut into 8 pieces.
  • Lay out the slices onto a non-stick baking sheet and bake for 20 minutes.
  • Enjoy!!
