Vegan Peanut Butter Fig Brownies

If you enjoy the texture of figs and the taste of brownies these are for you. A great nutrient dense treat for your sweet tooth. Family favourite, we love our figs! Such a great fruit to add into your baked goods.

Equipment

  • Oven
  • Hand/Stand Up Mixer
  • Food Processor
  • Spatula
  • Glass Baking Dish

Ingredients
  

Dry Ingredients

  • 2 cups Almond Flour
  • 1/4 cup Brown Sugar
  • 1/2 cup Unsweetened Cocoa Powder
  • 2 tablespoons Coconut Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • Pinch of Salt

Dried Fruit

  • 15 Pitted Dates
  • 10 Dried Figs

Wet Ingredients

  • 1/3 cup Natural Peanut Butter
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Unsweetened Almond Milk

Optional

  • 1/3 cup Chocolate Chips
  • 1/3 cup Roughly Chopped Pecan

Instructions
 

  • Preheat oven to 350°.
  • Combine all dry ingredients together.
  • Use a blender or food processor to make a paste with figs and dates.
  • Add all the wet ingredients into the dry mixture. Then slowly add in the fig and date paste.
  • Fold in optional pecans and chocolate chips then flatten in glass pan.
  • Bake in preheated oven for 15 mins.
  • ENJOY!!
