Plant-Based Pumpkin Chocolate Mug Cookie

This is such a great recipe if you just want a little sweet treat but don't want to bake a whole batch of cookies. It's got the perfect amount of sweetness to satisfy that sweet tooth. Definitely a family favourite in our house.

Equipment

  • Mug
  • Measuring Cups

Ingredients
  

Wet Flaxseed Base

  • 1 Tablespoon Pumpkin Puree
  • 1 Tablespoon Water
  • 2 teaspoons Ground Flaxseeds
  • ½ teaspoon Molasses
  • ¼ teaspoon Vanilla Extract

Dry Ingredients

  • 1 Tablespoon Xylitol or White Sugar
  • ¼ cup All Purpose Flour
  • teaspoon Baking Soda
  • teaspoon Salt
  • 2 Tablespoons Diced Dates, Semi Sweet Chocolate Chips or Raisins

Instructions
 

  • Combine all the wet flaxseed base ingredients into a mug with a spoon.
  • Add in the dry ingredients and mix until just combined.
  • Microwave on high for 45 seconds.
  • Let rest for at least a minute before digging in. (It will cook a bit more after you take it out.)
