Plant-Based Pumpkin Flax Granola

We hope you enjoy our take on this delicious pumpkin flaxseed granola. It's got the perfect amount of crunch and sweetness for a quick healthy snack or breakfast.

Ingredients
  

2 Flaxseed Eggs

  • 2 Tablespoons Ground Flaxseeds
  • 6 Tablespoons Water

Granola

  • 1 Cup Mixed Nuts (Brazil Nuts, Almonds, Pecans) Chopped
  • 5 Cups Rolled Oats Blended briefly
  • 1 Cup Steel Cut Oats
  • 10-15 Whole Pitted Dates
  • 1 Cup Almond Milk
  • 1 Cup Almond Meal
  • ½ Cup Natural Peanut Butter
  • ½ Cup Pumpkin Puree
  • 2 Tablespoons Hemp Hearts
  • 2 Tablespoons Chia Seeds
  • ¼ Cup Pumpkin Seeds
  • 2-4 Tablespoons Maple Syrup For the desired sweetness.
  • ¼ Cup Unsweetened Coconut (optional)
  • Salt to Taste
  • Cinnamon to Taste

Instructions
 

Making the flaxseed "eggs"

  • Grind two tablespoons flaxseed.
  • Combine with 6 tablespoons water. Let it rest for about 10 mins.

Putting together the granola

  • Add a cup of your choice of mixed nuts into a blender. Pulse a few times.
  • Add the rolled oats and steel cut oats to the blender. Pulse the blender and mix the ingredients as needed. Pour the blended mixture into a mixing bowl.
  • Add the pitted dates, flax eggs, and a ½ cup of almond milk into the blender. Pour this mixture into the mixing bowl with the remaining ½ cup of almond milk.
  • Add the almond meal, pumpkin puree, and peanut butter to the mixing bowl. Mix to combine.
  • Add the chia seeds, hemp hearts, pumpkin seeds, maple syrup, and unsweetened coconut to the mixing bowl. Mix to combine.
  • Add salt and cinnamon to taste.

Baking the granola

  • Preheat the oven to 375°.
  • Spread the uncooked granola onto a baking tray. Break down any granola clusters that are too big.
  • When oven is ready, place the baking tray in the oven and bake the granola for half an hour.
  • After the baking time, if the granola still feels wet, you can use the oven like a dehydrator to dry it out. Turn the oven off and let the remaining heat in the oven dry out the granola.
  • Serve with homemade almond milk or just as it is.
