Make your flaxseed eggs in a little bowl and let sit off to the side so it turns into a jelly consistency.
Add the salt into the flaxseed egg and then add the mixture into the bowl of a standup mixer.
Incorporate the sourdough starter into the bowl with a spatula.
Add the flour in slowly as you mix with a dough hook in your mixer for about 5 minutes. This should create a sticky dough.
Let dough rise for about 1-3 hours depending on how warm your room is. We like to use the bread setting on our dehydrator to create a warmer rising condition. (You can also put it in the fridge overnight and cook it the next more if you'd like for a slow rise.)
On your stove top boil a big pot of water while you make the noodles.
After it rises I like to split the dough into 4 and slowly run it through our pasta machine in little batches. Flatten out the pasta on the one side slowly and then make whatever shaped noodles you'd like on the other side of the pasta machine. We have a machine that does spaghetti and fettuccini noodles.
After all the dough is made into pasta noodles. Put them in small batches into the pot of water. It should take about 2-3 minutes at max to cook the fresh pasta.
Serve right after cooking when hot.
